Grilled Ham Steak with Spicy Teriyaki

Ingredients:
2 ham steaks 1 inch thick
Spicy Teriyaki Glaze
7 ounces crushed pineapple
6 cloves garlic, chopped
1 tablespoon ginger, peeled and chopped
1/2 cup soy sauce
1/2 teaspoon sesame oil
1 teaspoon red chili, puree
1/2 cup brown sugar
Direction:
For the Spicy Teriyaki glaze:
In a small saucepan, combine all ingredients and stir. Heat and simmer until thickened. Remove and set aside to cool.
Preheat grill to medium heat or 450 F. Place ham steaks on grill and sear on either side, about 3-4 minutes per side; brush with spicy teriyaki on either side to get a caramel crust. Remove from the heat and serve instantly with coconut rice or your favourite rice pilaf. Garnish with pineapple rings.

Garlic-Mustard Roast Pork

Ingredients:
3 to 4 pounds boneless pork loin
2 tablespoons garlic, chopped
1 tablespoon of oregano leaves, crushed
2 teaspoons of olive oil
1 teaspoon Dijon mustard
1/2 teaspoon sea salt
1/4 teaspoon coarse ground black pepper
Direction:
Preheat oven to 350 F. Mix garlic, oregano, olive oil, mustard, salt and pepper. Stir until mixed into a paste. Using a spatula or hands, rub the garlic mixture all over the pork loin, massaging it into the meat. Place the pork roast on a baking sheet and bake in the preheated oven. Bake one hour until the inner temperature reaches between 145 F to 160 F using a digital thermometer. Remove from oven. Cover loosely with foil and let rest 10 minutes before slicing. Serve with oven baked potato wedges.
