For old school New Yorkers, barbecue is something you do with hamburgers and hot dogs in the backyard or at the beach on summer weekends. “It’s really a little taste of Texas in Brooklyn,” says Executive Chef, Cenobio Canalizo who explains that maintaining a Texas-style, smoked prep is of the utmost importance at Morgan’s. It’s all about how it is prepared
“Our main smokers are from Texas,” explains Chef Cenobio. “Because of that, everyone in the kitchen knows exactly how to perfectly smoke wings, pork ribs, sausages, steaks and other items.”
It’s not just the quality of the meat itself that makes Morgan’s stand out, although fresh, prime beef is key. It is the smoking process itself that brings out the maximum flavor and texture and for that, the most vital element is time.
“Each steak is smoked for 20 minutes and cooked to temperature, and if they are medium rare, we cook them for another 12 to 15 minutes,” he says. “Brisket takes 13 hours. We put it in the smoker at 8:00pm and it wasn’t ready until the next day.
The result is great flavor and tenderness and meat that does not require a good steak knife to cut and literally melts in your mouth.
